Are there any step by step instructions, verbal overviews? Handholding?

I has been using MS Money for years, just got my first new MacNotebook today and trying to import data from MS Money and the balance is completely off. So I am trying to start fresh and enter account, can't find how to create the accounts and start fresh.

File-New-New Account will create a new account

If you switch into Account Manager tab it will give you more options of how to set up and modify your accounts.

2)

Balance could be off for a number of reasons:

We don't support investment accounts (yet) so your investments are not transferred
You need to adjust account opening balances manually
Currency information is lost during the transfer, for example exchange rates during the transfer between accounts
