I can't seem to find how to alter the std. category list. Can categories be changed or added onto?

There are couple of ways of doing this,

1) If you type in a new Category when entering a transaction My Money will popup a dialog asking you to fill some basic information about it and then will enter it into the system

2) You can switch into the Lists Manager tab, click on Transactions Categories and change them from there
